CATA'S NOTES

YOUNG MEZCAL TASTING PROFILE FROM AGAVE CENIZO:


Aroma- is a mezcal with aromas of orange peel, eucalyptus-type herbal note, note of green bell pepper. a pleasant smoky and wood note, aftertaste notes of cooked and mineral agave. it is fresh and a soft sweet note of cooked agave (quiote)
Color and body- transparent young crystalline mezcal. clean and shiny. medium body, with retention of legs or tears in the tasting glass.
Profile on the palate: it is a smooth mezcal with sweet notes and acidity. with medium to low persistence. a note of quiote or agave cooked in a wood oven. generates fresh note and good acidity.
Olfactory- Little smoked, which shows the correct selection of ripe pineapples, baked to the point for their adequate caramelization.

PAIRING RECOMMENDATION:


1.- Strawberry and green grape skewer
2.- Sweet quince and cheese skewer
3.- Tomatillo with smoked salt
4.-Semi bitter chocolate 80% cocoa

tradition, Conde creates a perfectly balanced mezcal. Part of a co-op of mezcal producers, in a town called Nombre de Dios, in a region called "el mezquital." Alfredo Conde makes a mezcal that not only shows his delicate touch, but captures the regions terroir.
